The worst part of seeing pics like this is I'm stuck at work with a bunch of meat I'd like to get going. Can't wait to get home! Tic Toc Tic Toc......
 
Took 9 1/2 hours to get it to an IT of 197, would have pulled at 203 but took alittle logger then expected and the family was getting anxious. The bottom was like butter and the top was sliceable but very tender so the best of both worlds.
