Just another cook while camping. I hadn't made beef ribs on the fire for awhile, usually smoke pork spares. These don't have much meat on them but they are kind of tasty.
Soaked some Anasazi beans overnight then set them on the fire after breakfast.
added smoked ham steak, onions, garlic, seasonings and let them simmer on low...
slathered the ribs with bacon drippings and seasoned with coarse salt and cracked black pepper...
let them smoke on the low heat side of the fire, (just like pork ribs) added a log when needed...
flipped and rotated them every once in awhile...
added stock to the beans when needed...
didn't foil the ribs...
I have foiled in the past but prefer non-foiled best.

when the ribs and beans were ready I added some corn...
gave them the same treatment, bacon drippings, salt and pepper...
the ribs took about 6 hours....
loved the beans but I was more interested in the ribs...
Just needed one more hand to hold my cold beer.
It wasn't a fancy meal but I really like ribs slow cooked over an open fire.. they just taste special to me. :-D
