Just another cook while camping. I hadn't made beef ribs on the fire for awhile, usually smoke pork spares. These don't have much meat on them but they are kind of tasty.

Soaked some Anasazi beans overnight then set them on the fire after breakfast.

added smoked ham steak, onions, garlic, seasonings and let them simmer on low...

slathered the ribs with bacon drippings and seasoned with coarse salt and cracked black pepper...

let them smoke on the low heat side of the fire, (just like pork ribs) added a log when needed...

flipped and rotated them every once in awhile...

added stock to the beans when needed...

didn't foil the ribs...
I have foiled in the past but prefer non-foiled best.

when the ribs and beans were ready I added some corn...
gave them the same treatment, bacon drippings, salt and pepper...

It wasn't a fancy meal but I really like ribs slow cooked over an open fire.. they just taste special to me. :-D

You've got the touch! I pass on ribs with very little meat on them, but you make them very appealing

Thanks RevZiLLa! I prefer meatier ribs too, but these were better than no ribs. lol

Great Minds?? Just returned from fishing the San Juan with a 20# sack of Anasazi beans and 5 bottles of Adobe Milling bean spice.

You eat well on your fishing trips. I use a microwave :))

Great looking meal cowgirl !!
 
Wow that all looks great. I really enjoy long cooks over a real fire, not that I could ever match that. We are having out first real cold front hit tomorrow driving temps down to the 40's at night and 60's to low 70's during the day; perfect for firing up the ranch grill.
 
Haven't tried those sort of beef ribs due to lack of meat. But I swear, everything you cook looks good. You have the "touch"...
