Last month I did Asian ribs and thought the recipe would work well with pork belly. Starting them on the FE pellet cooker with hickory pellets and a foil pack of cherry chips on the deflection plate.

How do you get them to stay on the tray when it's sideways like that?

Love the variation. I've done them regular bbq, with a jalapeno glaze, and jerk style. This looks like a great method for the next round!
