It's almost BBQ. Not really low and slow though. Fired up the kettle and put on a tri-tip I rubbed last night. Threw some mesquite and hickory on it. Let it ride at about 340º 'till it hit 115º. The opened it up and let it get hot and seared the outside for about 3 minutes per side. Wife says best one ever... I thought it was pretty dang good...
