Rack of Lamb with a Asian type salad and a Pomegranate and red wine reduction

Started off with a Rack of lamb from Flinders Island Meats, Huntingdale.
Not Cheap but oh so tasty.

This rack was double Vacuumed,I am assuming for export.

look at that layer of Flavour.

Scored the Fat cap and rubbed with some Sea Salt Flakes.

Now the important part to me.
rendered the Cap starting off in a Cold pan, made about a cup and a half of fat.

Then into the Acorn.
A Gas Oven would have done the same Thing I believe.

Qued untill my desired Doneness was achieved.

Rested and Carved

Served with Baby Potato and Vonnies delightfull Asian type salad.

Sauced with a Pomegrannate and Red Wine reduced Sauce.
Awesome combination for Fatty lamb.
