Santa Maria rack of lamb

Dry brined a Costco rack of lamb with sea salt overnight. Rubbed with olive oil, hit with garlic and rosemary powder and some fresh cracked pepper. Cooking over Texas pecan. Serving with sweet potato fries, Caesar salad and a mint, jalapeño/habanero chimichurri

That looks like something I need to try - I smoked one once - was just ok. Think grilling would be the way to go.

More of a reverse sear. Raised up that far in the beginning it was cooking fairly slow. Once internal was around 116 threw an extra log on and lowered the grate to sear.
 
I find most of the shakiness of mine comes from the super well engineered legs of the kettle itself- "they'll do" was probably their motto. I guess if you had it loaded down, raised up and put some good side force on it, then the entire kettle and attachment would head to the patio.

Cooked on my about 10 times- never had any "oh hell" moments. Well there was that kitchen towel fire incident- but I blame that on Jack...Daniels.
