Slathered the beef ribs with bacon drippings, then seasoned with coarse salt and cracked black pepper. Into the drum with hickory.
Cooked onions and garlic in bacon drippings and butter, til tender...then made a basic white sauce. Flour, milk and seasonings. Also added provolone and mozzarella for the gooey factor.

peeled and seeded the chiles...
ended with more mac and cheese sauce, cracker crumb topping and a dab of butter...
into the drum...
til hot and bubbly...
some garden veggies...
a bite of rib...
and the chile mac...
Nothing fancy. I like chile mac and could probably make a meal out of it by itself.
