There is burger TD going so I wanted to try something I've never done when it comes to doing burgers. Went sous vide first. :thumb: It was a TON of work but honestly totally worth it.
2 10oz patties and here's how it went down
Started with strip steaks
Cut them
Ground them coarse
Also added some chuck
Same deal of course
Ground the chuck fine
Mixed 50/50 and made two 10 oz patties
Made some spread
Vacuumed the patties seasoned with S&P and butter
Into the water bath at 128* for 2 hours until I worked on the rest of the stuff
Sweet potato fries
Patties finished with the sous vide phase and ready to hit the hot grill for a quick sear and to melt on the cheese
Ready to get dressed
Dressed with spread, beer caramelized onions, tomato, shredded romaine
Pics don't to it justice. Insanely moist
I started eating the other half with knife and fork until I finally quit. :hand: Did I say it was the best burger I've ever had?
