What a fantastic meal, Jeanie! I never would have guessed the taters were going to get battered and fried, but they sure look awfully good!

Thank you! I use light beer and a heavy wood. For his cook I used hickory. Anything lighter than that won't work as well. Good luck to ya! :-D

I like your way of thinking!

I found the beer batter recipe....


1 cup flour
1 tsp salt
1 tsp baking powder
enough beer to make pancake like batter (about 3/4 of a 12 oz bottle)
or more if you like a light batter

I use light beer. Dark beer changes the flavor, makes the batter too strong to taste the smoke.
