PRON! Three racks of St. Louis cut ribs!

Hey Everyone! First cook of the season and I've been craving ribs. Got a 3 pack of St. Louis cut from CostCo to cook up. Sorry, no pics of prep. Just afters.

I trimmed 'em up and removed the membranes. Each rack got a different rub combination. First, I put a light coating of 3Eyz on all of them and then each got either Pellet Envy's Zero to Hero, Simply Marvelous Cherry, or Smokin' Guns Sweet Heat. I then threw them in the fridge while I got the WSM up to temp.

I ran the WSM with Stubs natural briquettes and used Cherry and Pecan chunks for smoke. I was shooting for around 275* for the whole cook and it stayed within 20* of that mark the whole time. I ended up smoking them for about 2hrs. and 45mins. and then wrapped with bbq sauce thinned with apple juice. The racks went back on for about 45mins until they were ready. I then unwrapped, sauced, and set the sauce for 15 mins. Texture was almost perfect on all 3 racks. Definitely my best ribs yet!

In case you're curious about the plate, we ran out of our nice plates so I was forced to eat off of one my Grandmother gave me as a child.

All the 3 slabs look really super to me! Complimenti!
Just to understand better..... Cooking T was planned to 275 F but you were 20 deg F more than that ( or less?). You say texture was almost perfect. In you opinion ribs needed some more minutes in foil?
