The jerk is cooking fast. Only 1 hour in.

Prep the fish..Fresh red snapper all cleaned up for dinner

Olive oil,adobo seasoning,salt,pepper,cilantro,green\red\yellow pepper,spanish onion,lime,lemon,butter,new potatoes,okra.
Put on the kettle at 600F wrapped fish in HD foil.

Cooked the butt for around 6 hours with pecan.

Been to Jamaica a lot, great post, like to see more jerk posted. Your food looks awesome.
 
Sweet! Here is a testimony about Jamaican BBQ from 1774 -

“The fame of our Jamaican barbecue and brawn is so well established, that it would serve no purpose to reiterate their praises, except to tantalize the reader. The tame sorts are a very profitable stock to the settler or planter, as they multiply fast, and are kept or fattened with very little trouble. One boar is generally allowed to ten sows.”
 
All of the food looks great. I too like Walkerswood and have found Grace to be a bit salty. One of the best pieces of a fish especially one like a snapper is found in the cheeks. Thanks for sharing your cook.

Walkerswood has been my favorite for a long time. Looks good!! I wanna plate!
 
I'm sold. Now I am going to have to make jerk pulled pork. Excellent cook and kudos on the presentation. Very impressed.
