Smoking at 375F. Wind is keeping the temp up.
The jerk is cooking fast. Only 1 hour in.
Prep the fish..Fresh red snapper all cleaned up for dinner
Olive oil,adobo seasoning,salt,pepper,cilantro,green\red\yellow pepper,spanish onion,lime,lemon,butter,new potatoes,okra.
Put on the kettle at 600F wrapped fish in HD foil.
Cooked the butt for around 6 hours with pecan.
All shredded
Fish was great.
Plated with black bean and rice
Some people were turned off by the fish heads so I had one left over.
