Are we talking dried like chipped beef style? or like jerky style? Cause I still have that hind quarter in the freezer from last week.

The Amish in Belleville usually makes it for us.

You get a deer?

I sure did. A nice young sow wild pig and a turkey as well. Headed back thanksgiving to finish filling the freezer for the year. I will definitely be trying this recipe.

I start out low. I will probably smoke for 12 hours around 120 then bump it up a bit.

When I did beef last it took 23 hours to get to 180.
 
Sure brings back memories, the chipped beef that is... never thought to try with deer... plz let us know how it comes out... the ruts on here, going to the deer camp this weekend

I grew up having it made with venison. Beef was to expensive to use.
 
Watching this one Adam.
I pick up my venison tomorrow, looking to do something like you're doing here.
