The Amish in Belleville usually makes it for us.

My turn to give it a try.
 
So then you gonna smoke it at 160 for ?? a week?? 3 days??
Looking good.

I start out low. I will probably smoke for 12 hours around 120 then bump it up a bit.

When I did beef last it took 23 hours to get to 180.
 
Sure brings back memories, the chipped beef that is... never thought to try with deer... plz let us know how it comes out... the ruts on here, going to the deer camp this weekend

I grew up having it made with venison. Beef was to expensive to use.
 
Here is a pic of the venison drying in my beer fridge along with a bone in loin.
