Offset baffle/tuning plate ?

I've done Dollar Store cookie sheets with foil pan water pan and it helped with temps
Instead of 75* difference end to end it was 25*.

 
But if only cooking a single brisket just put it center of pit and put an oven thermo next to it unless you have a Maverick or such.
 
Real, steel tuning plates would be best but I used some of these with good results in my old NB Black Diamond. I made a heat deflector (baffle) with a half of an aluminum turkey roasting pan and then laid the grilling pans inside the pit so that heat exiting the firebox was directed down and then underneath the grilling pans. The heat gradually rose up through the holes in the pans and did a pretty good job of evening the heat out in the pit.

In my local grocery store the pans were sold as singles for $1.99 or so.:-D
