IN honor of Jazz fest. I recreated one of my favorite Jazz Fest dishes, Crawfish Monica.

Had a crawfish boil over the weekend and peeled 2 lbs of crawfish.

Combined some butter, parsley, green onion and garlic and sauteed for a while then added the cold crawfish and finally the cream. As soon as the cream boiled I lowered it and let it simmer for a bit and added in the cooked pasta.

I'm generally not much of a pasta guy, but I'd KILL a mess of that (pasta and all) to get at those dads and the flavor that I'm sure made it into the pasta. YUM!
 
That looks awesome man. Well done. We might have to try that at the party.

I think I'm going to boil a sack this weekend just to peel and freeze. I mean to do that every year and never remember till it's too late.
