So I am wanting to test two different brisket flavor profiles and since brisket is so farking high I'm thinking about buying 1 brisket trimming my normal way cut it straight down the middle and inject and rub each half and cook them till probe tender ? Good idea or not?
 
Since you are just looking for flavor, I think that's fine. You could also use chuck and test with two chuck roasts is that is cheaper.
 
They seem to. The grain is similar to a brisket. Brisket would be better, but it the savings is enough, it would be worth a shot.
