Im new to the brethren but not to BBQ. Im 30, married now for almost a year, and I cook BBQ for a living. Born in Kansas City, grew up in south Texas and now live in N.C. I love cooking brisket and whole hogs the traditional way. Thats my thing. I occasional compete with mixed results. I working on that though. Maybe someone can give me some pointers. I almost forgot cause I'm sure to get asked. My names Cole and I'm the Pitmaster at Saucemans BBQ.

Welcome to The Brethren Cole. Good looking cooker :thumb:. I'm sure you've figured out by now the competition BBQ is different than backyard or restaurant BBQ. I suggest you take a competition class and/or a judging class to get a better idea of what you need to turn in. It will shorten your learning curve. It helped me. Good luck.
 
Cole, Welcome to the Brethren!! There is a wealth of knowledge and experience amung the members. If you have a BBQ or cooking related obsession or hobby this is the place to be. Sit back, soak up the knowledge and jump in there and be sure to share yours as well. If you can't find or get an answer to the question here then there is probably not an answer available.

Welcome to the forum Cole, glad to have you join us and hopefully take part in the other forums.

We don't have a lot of rules here other than spam and advertising are not permitted, the rest is just common sense, courtesy, and mutual respect for one another.

You'll find a great group of people here with a willingness to help and guide you, regardless of of how simple or how complicated you think your question may be. You'll also find that there are many ways to achieve great food, there is no single "cookie cutter" method as some have been conditioned to think. You'll just have to try a few different methods and soon you'll master the way that works best for you.

If you can't find the topic you need help with, or have questions about a specific topic, just start a new thread in the related forum.

There are many members with years of experience that are willing to answer your questions and share their knowledge to guide you in the right direction. Collectively there is a wealth of experience and knowledge among the membership, including you. Don't be afraid to jump in there and share your knowledge and your experiences as well.

Been to "Saucesman's" and it was pretty good. Wish I knew you were you at the time, I would have spoke.

If you are interested in competing in whole-hog the "traditional" way, then you need to contact the North Carolina BBQ Association as that is one of their categories in competition, along with whole shoulder and whole chicken. GOOD LUCK!

I did a NCBBQ comp last year. I like the format a little more than MBN. It suits my style of cooking better.
 
Welcome to the Brethren. I lived in KC awhile ago but recently moved to Charlotte. I actually had someone tell me to try Saucemans last week when I was complaining about the surprising lack of good BBQ here. I will definitely put it on my list to try now.
