Hey guys

I've been professional chef for the last 13 years. I have wanted to start competing in a few contests this year (2015). I have spent a few years figuring out the different ways spices react to smoke and how to manage my smoker. I consider my self a newb when it comes to bbq and at a total loss with competing. I would love to help a team out during a comp but beyond that I would even like to help in the planning stages and flavor profile discussions if those take place within your team meetings.

I live in Naperville IL please let me know if you have a team willing to teach.
