The Dark Bark
I just picked up a 5-6 pound prime rib. I never cooked a prime rib before and I am looking for a few suggestions.

I own a Weber Kettle with a rotisserie add-on. I also own a Traeger Pro Series 34

Any ideas would be appreciated.

I usually just season with SPG and smoke low, 225-250, with a little mesquite until it hits about 120. If it developed a good bark/crust, I'll rest for little then serve. If the outside is light, I'll rest for a little while I get the grill hot, sear then serve.

I used to smoke over a pan of veggies and broth to make au jus, but now just make the au jus in a pot. Prefer the au jus not smoked.
