I was a bit lucky yesterday at the local grocer. This is a Bass Straight Grass Fed Picanha at 40% off.

Two Pichana's for the beef challenge it seems.
My hangers are still wet aging. Not sure i will have time for this challenge.
About the skewers, I have two sets of Stainless Steel double prong skewers i use for ground beef kabobs.
I would love to cook Picanha but...

That said, Im not allowed to buy anymore beef this year. I just bought 25+ lbs of ribeye's for $120usd


Instead of cooking this week, im going to be slicing and vacuum sealing.

OK Fellas...

Sorry for the long interval. Had visitors and then had an early start today. 10+ hours in an Ambulance. Saw some bad sh!t today I started to wonder if some part of Melbourne had started to turn into some part of Alabama (no disrespect to any Alabamans out there, but I hope you get my drift)

OK. Enough chit chat...

Made a HOT fire:

Yep. probably too hot using very old oak flooring offcuts and some charcoal. I was thinking Brazilian hot fire and picanha, so why not.

Coupla quick shots here as the action was a bit serious. This is why a Santa Maria Grill is an amazing thing and I really want one now. Had to go flipetty flip flip in quick order!

Yep, so it looked like it got away from me but it really didn't, being a seasoned BBQ Brethren with "Somebody Shut Me the Fark Up" Creds. :p

Anyway after resting..... 2 bits looked like this:
