Inaugural cook on the new smoker. 3 racks of St. Louis ribs.

Rubbed with a home mixed spice blend. Smoked for 3 hours over Oak @ 225*. Wrapped in pink butcher paper and returned to smoker for 1.5 hours. Removed from wrap, lightly sauced, then back in the smoker for another 30 minutes @ 275*.



This thing is more than I ever could have hoped for.

Shirley Fabrication does great work.

Kevin White from Legendary Transportation got me my cooker for a fair price and without any damage.

Congrats on the new Shirley Fab! ~Those ribs are amazing, like burning sticks on cruise control doesn't get any better.
 
Congratulations! that is one sweet cooker, great job on the cook those ribs look delicious.
