My wife is gluten free (not by choice) and one of the things she struggles with is finding a GF hamburger bun that is not as dense as a rock.

So I decided to take matters into my own hands.

I had some Waygu ground beef from Wild Fork and decided it would be a good time to try to make some slider buns.

I chose Brioche as my target bun type, due to the buttery texture.

Ingredients:
2 cups gluten-free all-purpose flour (use one with xanthan gum if you can)
1 tsp active yeast
1-2 tsp xanthan gum (if your flour does not contain it already)
1 ½ tsp sugar
½ cup + 2 tbsp milk, warmed
½ tsp salt
4oz. melted butter
2 eggs + 1 egg yolk to brush on the top

Mix dry ingredients together and wet ingredients together and then fold wet into dry.
This will form a dough.

Proof dough (plastic wrap over bowl) for 2 hours and let it rise.
Freeze dough for 30 min.

Form into (6) balls, lightly press on balls to form bun
Brush bun with egg (yolks only)

Cook for 20 min in a preheated 400F oven.

Let cool

I knew better than to open this before I've had dinner. Not only am I hungrier, but now I want what you had! Another successful cook under the belt there, John. Great job!
 
Some day I hope to lose my fear of all things flour and try something like that. It's football season so those little sliders should work very well. Great job.
