I'm going to your house next year.

Mrs. Wampus's Sausage Stuffing
2 bags Pepperidge Farm Herb Seasoned Cubed Stuffing
2 - 1 lb rolls sage flavored breakfast sausage
3 cups diced onion (about 3 med onions)
3 cups diced celery (about 6 stalks) --Equal parts celery and onion--
Poultry Seasoning
Ground Sage
Butter (about 1/2 stick)
Cook sausage about 1/2 way and add the onions & celery...cook until veg is tender.
In large bowl add sausage/onion/celery to bread crumbs....stir together.
Add Poultry seasoning and sage (as well as salt/pepper) to taste
Place all into oven safe dish
Add pats of butter on top of casserole
(at this point....refrigerate until ready to bake if desired)
Bake at 350 until hot throughout and crusty on top if desired (about an hour)
Normally we don't cover at all....it gets nice and crusty on top.
This is the ONLY recipe that I'm aware of that we ever cook in this house without a written down recipe. That's how Mrs. Wampus rolls. Drives me NUTS!!!
Anyway...this recipe is how we did it this year.
Normally I ask her, "How much onion" and she says, "Oh, I don't know...just start chopping and I'll tell you when it looks good."
