Wampus Family Thanksgiving Feast -- PRON HEAVY -- home cured ham, smoked turkey & so much more (recipes included)

Looks like a fantastic meal - I have no doubt it tasted as good as it looks!

I didn't have the time to do a home cured ham this year - I'm jealous! Happy Thanksgiving to you and yours Wamp!

Everything looks perfect. I'd love to hear more about that stuffing.

I'm with BBQWilly, I'd like to hear about that stuffing. Everything looked perfect.

Mrs. Wampus's Sausage Stuffing

2 bags Pepperidge Farm Herb Seasoned Cubed Stuffing
2 - 1 lb rolls sage flavored breakfast sausage
3 cups diced onion (about 3 med onions)
3 cups diced celery (about 6 stalks) --Equal parts celery and onion--
Poultry Seasoning
Ground Sage
Butter (about 1/2 stick)

Cook sausage about 1/2 way and add the onions & celery...cook until veg is tender.
In large bowl add sausage/onion/celery to bread crumbs....stir together.
Add Poultry seasoning and sage (as well as salt/pepper) to taste
Place all into oven safe dish
Add pats of butter on top of casserole

(at this point....refrigerate until ready to bake if desired)

Bake at 350 until hot throughout and crusty on top if desired (about an hour)
Normally we don't cover at all....it gets nice and crusty on top.

This is the ONLY recipe that I'm aware of that we ever cook in this house without a written down recipe. That's how Mrs. Wampus rolls. Drives me NUTS!!!

Anyway...this recipe is how we did it this year.
Normally I ask her, "How much onion" and she says, "Oh, I don't know...just start chopping and I'll tell you when it looks good."

Crazy woman......

Nice spread Wampus. A true mid-western Thanksgiving.

Good to see you out cooking and posting my friend. I hope your crew had a great day of giving thanks!

This is the broccoli-cheese casserole recipe I grew up with. It's my mom's recipe. The broccoli ends up kinda mushy, but.....that's how Mom's always was you know?!

Here's the original recipe. Pretty easy.......

Broccoli Cheese Casserole

Ingredients:
4 - 10oz pkgs frozen broccoli spears
1c chopped onion (about 1 big onion or 1.5 med)
1 stick margarine or butter (I use butter)
2 cans cream of mushroom soup
8 oz Velveeta

Recipe:
Cook broccoli in boiling water (try not to overcook)
Arrange broccoli in 9x13 casserole dish
Melt butter, saute onion until tender over medium heat
Add mushroom soup, heat through
Add CUBED Velveeta and stir until melted
Pour cheese sauce over broccoli
Bake at 325 for 30 minutes, uncovered.

NOW....the broccoli stalks are getting hard to find (at least around here).
PLUS, Mrs. Wampus asked me why we couldn't use regular frozen broccoli or even fresh....to which I answered....BECAUSE THAT'S NOT HOW MOM MADE IT.

:becky:

The stalks end up kind of a pain to take out of the dish because they're kinda long. You COULD pre cut them smaller or do like Mrs. Wampus said and try florets or chopped broccoli. There's always extra cheese sauce too, so one could easily use MORE broccoli and keep the cheese sauce the same amount to make this stretch.

This is one of those recipes that I always look forward to during the holidays. I used to bug Mom about it every year. Now that I got her recipe, I just make it myself.

Let me know what you think!

Looks like a great meal with all the fixens :clap2: and with the family involved it makes everything all that much more special

You are killing me that all looks freaking awesome and all while I was eating the sister in laws dried up turkey jerky
