Happy Valentines Day to all

Cannelloni

1. Start with Beef and Pork seasoned with Italian spices and herbs, S&P



2. Smoke at 275° for 2 hours



3. Sauté celery, onion, garlic in Dutch oven. Add meat as well as wine, sweet vermouth, chicken broth, beef broth



4. Braise at 300° for 3 hours (save juices)



5. Grind and save (I put mine in a fatty piston.)

6. Make fresh pasta sheets





7. Squeeze out some meat filling on to pasta sheet



8. Roll



9. Make red sauce (6 parts marinara, 2 parts braising juices, 1 part BBQ sauce)
10. Make Mornay sauce
11. Assemble



Beef Spiedini

1. Pound out some beef



2. Dip in a mixture of olive oil and melted butter



3. Coat with a mixture of fresh bread crumbs, Italian herbs and spices, parmesan



4. Add a layer of provolone and a layer of prosciutto



5. Add basil, tomato, onion



6. Roll



7. Make sauce (butter, olive oil, lemon, white whine) add when plating


On the egg at 375° for 40 min

Plated with Mushroom polenta and pine nut/prosciutto broccoli and a nice bottle of wine

Geez, one day I want to grow up to be able to cook like that.....cubelets & pasta & braizing & rolls & egg washes & crusting & rolling and & and.....

looks like a HIGH END restaurant man !!!!
