Tim it looks like you are a master on the pit already... thx for the great post.... I can help you out on a paper towel holder... in fact I'll fab one up that can be used for paper towels and foil at the same time ..... all you will have to do is drill 2 holes and bolt it on... the hardware will be there too.... I'll give you a call next week.....

Czar- The wait is more than worth it, as a matter of fact the wait time was part of the adventure for me.




PJ- It is a 24x55 straightback cabinet. Along with the obvious upgrades a few others I got were

* extra grate on the heat deflector in the warming box to keep the charcoal elevated for airflow, it works flawless

* extra rack position towards the top of the smoker for different options if doing a large piece of meat like a hog.

* the backsplash on the stainless table, I wasn't quite sure about this when I first saw it, but it is a brilliant idea(not mine)

* elevated burners to be level with the table, I think this will pay dividends with my back.

 
Your cooker was actually my template in a lot of ways PJ, it put together a lot of separate upgrades others had at the time, from there I stole a couple other ideas and even had one of my own.

Glad to hear that you liked my setup. The best part of the wait is seeing what others do and using the collective imagination of all of those ahead of you. Then you add your thoughts to make it perfect for you. Right before mine was built the sf boys designed the straight back. A week sooner and I would have missed it.

Paul got the metal work done, I believe he has a local guy that does it. I sent him a "button" sized version of the work on the front of my cooker and he took it from there. Neither piece could have turned out better.

Really awesome smoker, congrats! On an unrelated note....what radar detector is that? Besides guns and smokers, that's another hobby of mine.
 
Thanks. The radar detector is a Escort Passport 8500, I bought it 9 or 10 years ago. At the time it was at the top of the pack, I'm sure a lot has changed since then but, I still haven't gotten a ticket since I bought it.
