Upon my return yesterday The Bride had taken over cooking duties. A welcome change for me, more especially her (guessing). She took some smoked pork loin and made stacked green chile cheese enchiladas. Here's where she MSU'd a walk off home run. She said her meat sauce needed to be somewhat thicker. She had one of those shredded hash brown packs. The kind you get at an on the road breakfast. Shredded and crispy edges. Anyway she fried added about a quarter cup of crispy hash browns to the meat chile mix. Honestly At first site I thought she had added shredded parmesan cheese. However, the taste and texture was perfect, the amount included was-well, perfect. She was just playing around came up with something we will definitely do again. Beans in Chili, sit down, we've got Hash Browns in Chile.
