Corned beef hash, er somethin'

I went on a deep freezer dive the other day and turned up one of those packaged corned beef things that are super cheap after St. Paddy's day. Best by date was 2018 so I figured it was time for it to get used and make room for a fresher version that will be purchased 3/18/23.



So, some hash was in order...


The day before the meal I set the pellet pooper for 275, and gave the beef a light dusting of Oak Ridge Black Ops. Have to go sparingly on that stuff now you know.

Once the smoker was up to temp the hunk o meat went on the grates for about 4 hours

After 4 hours she looked purty

So I wrapped her up in a double layer of foil and let her go until the IT hit 205, then took it inside and vented the foil to let it cool off.

Final step for the day was to wrap it back up and into the fridge overnight.


The next day I diced a couple red peppers and one green pepper and sauteed them until nice and soft. I cubed up the corned beef and mixed that and the bell peppers with some diced potatoes and shredded cheese, then poured a couple beaten eggs over the whole shebang

Then into the smoker at 350 for about an hour and a half. About 10 minutes from the end I added some shredded cheddar on top to get melty.
