Eggplant!!!!

Slice the eggplant into 3/8"-1/2" slices, brush with evoo and grill till lightly toasted, flip over top with mozzarella, slice of tomato seasoned with salt pepper, garlic and basil then sprinkle with parmesan cheese. Leave on grill till cheese is melted. If fire is too hot, remove from directly over the coals and finish indirect till cheese melted.
