It has been decided, it has been declared:
I will be cooking a NC style pork BBQ feast this weekend.

This feast will more than likely include:

  • Pork Butt
  • Pork Picnic
  • (can't readily find whole shoulders here, so this is close enough)
  • Slaw
  • NC BBQ sauce (dip)

I will probably do this on Saturday.

Hit me up below with any questions/topics you want me to cover while cooking and I will do my best to post on it.


As a refresher:

I don't:

  • Foil while cooking
  • Sauce while cooking
  • Use any fancy rubs (just salt)
  • Pull my Pork

I will be:

  • Using Cherry wood and charcoal
  • Cooking in my COS stick-burner
  • Drinking and posting way too much during the cook
  • Using the trusty cleaver to coarse chop the pork as it should be

That's the Eastern NC style there ^^^^^^^^^^^




Western NC style involves banjo music and fallen timber.........you don't want to get caught up in that.....trust me. :becky:



Born and raised in Eastern NC.....first 30 years of my life spent there. I'm a big old 5-sammich eatin fella that has eating piles of great bbq.

I love going home to visit with my family and enjoy hitting the BBQ joints I grew up eating at.

I love their flavors and have taken those and combined with the flavors i've grown to love in Georgia BBQ. I aim for a fusion of the two with my own fledgling grilling attempts.


I'm seriously looking forward to seeing this cook develop Sir-Pork-A-Lot.

Get your vinegar sauce made up and let the bbq shine !!!!!!
