Yesterday's Sunday Dinner: Stuffed Pork Loin

From a recent freezer dive, using up what's frozen before purchasing more. I started to butterfly it -

Butterflied, fairly uniform in thickness, seasoned with Oakridge Secret Weapon -

Just an easy boxed bread stuffing -

Topped with the green onion/garlic/spice mixture from the red chili oil I made the day before -

Rolled, tied, seasoned with more Oakridge. Out onto the Goldens' it goes, indirect around 350F -

Take it out of the pan, give it a flip for even cooking -

Incredibly tasty! The addition of the Chili Oil infusion ingredients sent this way over the top, so much better than just plain old bread stuffing.

Wow! Having just had our Thanksgiving meal last night, that would be right up there for a proper Thanksgiving feast. Well done Dom! Wish i could find loin with that amount of fat on it, i might cook it more often.
