I have not cooked spare ribs for over a year now and have been on a baby back kick for some reason but going to cook some today . I am using Cherry chunk wood and trying a new rub I made last night and has some awesome color to it .

If time permits, I always go for spares. They seem to have more flavor to me. Plus, since I trim them only lightly, peoples eyes light up when they see these big 'ol bones on their plates.

That Assassin appears to be a great cooker.
