Hi! So a couple months ago I came up with this idea but haven't had a chance to make it until now... on thanksgiving I threw a pork belly on the smoker with the turkey, plus a few tomatoes. I took the smoked tomatoes and made a tomato jam because i don't care for raw tomatoes on sandwiches. I also made an aioli for the first time and i put some parm, caramelized onions, and roasted garlic in it, yum! I wanted to use Romaine lettuce on the sandwich but, well, you know... so I used green leaf instead. I also used homemade potato bread! and as a side I made potato chips and sprinkled cajun seasoning on them, so good!

Tomato Jam reminds me of a kick I was on for a while with Bacon Jam....

If we did them both...we could do a BLT and add both....hmmm

You can just combine them. There are a lot of recipes for Bacon/Tomato jam online. I have been meaning to make some, for a long time. Just never got around to it.
 
That looks awesome. I’d eat a sandwich like that anytime. Probably two.
