Here is what I’ve found.
Doesn’t work with American cheese. Needs to be cheddar.
For convenience, I use pre-sliced cheddar, but shredded cheddar actually works a bit better, but cooks really quick on the griddle, so watch it

IIRC...the Squeeze Inn used cheddar and hit the griddle with a little water before putting a bowl over the burger, steaming the cheese into melty goodness.
