Put a turkey breast on when my pit was 300. 5 minutes later had to leave unexpectedly when I came back 50 minutes later pit was at 190 and meat at 78. I should be safe since the temp was above 180 right?
 
I'd say you're alright given the available info. Sounds like the turkey was cooking fine to be at 78 in about an hour - in fact, it makes me wonder if the pit temp was actually hotter than 190. Maybe the turkey was near the pit temp probe?

The general rule - at least as I know it - is you don't want to go more than 4 hours between the temps of 40-140 (that's the temp of the food) unless you're smoking cured meats.
