Reds Grass fed Ribs

Here he is babysitting some ribs.
Cape Grim,grass fed from Tasmania.
just wrapped with some Plum Jam from last years harvest.
Fingers Crossed.

After an hour of being Wrapped and smothered in plum sauce, back in the Smoker and Ramped it up
Dinner was absolutely tasty.

Thanks to Red, dinner was safe

As a general rule,I don't like very sweet so we used plum instead of too much sugar.
plus we had heaps in the cupboard,we use fruits a lot
The jam had enough in it to carry sweet but not sickly sweet

Nice balance IMHO
