Prime Brisket: Pick your pit!

Fight thru this cook with the bagged wood- the offset is the way to go.

It's something of a shame that you are having a hard time getting smoker ready splits.

But if you keep never buying a cord, you'll keep never having a cord.
 
Normally I would say go with the Brazos like the others but in this case with an ATC on a WSM and a prime cut like that I would go with what I know, the WSM. Practice later.


I order firewood every year and have a "Guy". He cuts it and keeps it off the ground after split. Not sure how he does it but never rotten, not green but not seasoned to the point it goes up like paper either. Went through about 10 sources over 10 years before I found him. Also keep some to give to friends with stick burners the next year. White and red oak along with some pecan. Works great for them.


Regardless, that's a great cut. Let us know how it turns out.
