Had what I thought was a 7 lb shoulder wrapped in butcher paper in my freezer. Upon thawing and opening I now find it is actually a huge rib roast. (note to my son - nice labeling). I had myself all pumped up for a low and slow shoulder tomorrow but I don't think that's the way to go with this roast. Maybe just a nice rub and quicker roasting. Anyone with some experience with this on a smoker please pipe up. It does have a nice layer of fat on top.
