Pork Chops - Brined, Smoked & Grilled...

Costco had Pork Chops on sale during my last visit. They had regular cut, and some monster chops as well. I picked up a pack of the thick chops. Each one weighed in between 16oz - 18oz. I brined them for 2 days in a 1/2 gallon of water, 1/2 cup of kosher salt, 1/4 cup dark brown sugar and a little garlic powder & black pepper. Seasoned them with a little homemade rub then smoked them at about 300* on the Weber 26 with Pecan and Hickory chips, then seared to finish. As I do with steak, I rested them with a lil butter underneath and on top for about 5 minutes.

The results were excellent. Super moist and flavorful. Definitely something I'll be doing more often.

Great looking chops. I’ve heard Costco shoppers complain that they’re cut too thick. I love em and my freezer’s full of them.
 
Looks great! About how long did you smoke them for?

I never really pay much attention to time, as I let temp and feel dictate when things are done. But, a good estimate would be about 30 - 35 min at about 300 then I grilled them till done...

Me and the boys ate them while the wife was at the gym. I prepared her plate when she got home and went to watch TV. After she was done she asked, How big was the chop she had? I told her 17-18oz. She said oh my, I ate it all :icon_blush: Chops may be her new favorite now as well, lol...
