Hey There!

I'm in NJ and we're supposed to get nailed with snow this weekend...so it's a perfect Q weekend (i.e. no responsibilities other than cooking!). The local butcher has a great deal on 1.5" pork chops. I'm looking for ideas on what to do with them. I have 6 mouths to feed (leftovers encouraged), a gas grill, a kamado, a LSG offset and all the time in the world. What do y'all recommend?
 
Brine them- Harvest Brine if you have it. If not check thirdeye's blog. His light Brine works well for me and I use 1/2 of the salt and cook on the Kamado Or if you can sous vide vac seal them and sous vide at 145 for a few hours and pan sear them- really good
