Had a poker game on Saturday night so I made burnt ends with some pork belly -
Fired up the UDS with some cherry wood. Cubed up some pork belly and dusted with a basic rub.
Put it on for 2 hours at ~300F. Then pulled it, put it in a foil pan, then drizzled with honey and added brown sugar and butter.
Covered with foil then back on the UDS for about 1 1/2 hours.
Pulled it and things are starting to look good -
Moved to a new pan and coated with a green chile glaze
Back on the UDS uncovered for about 20-30 minutes (wasn't watching the clock too closely).
Here's the finished product (taken outdoors, so the light is a bit different):
