I recently received a recipe from Heath Riles for pork belly burnt ends (https://www.heathrilesbbq.com/blogs/favorite-recipes/pork-belly-burnt-ends-on-the-pellet-grill), he hooks me up from time to time :wink:
I started off with a piece of pork belly around 3 lbs. and removed the skin and cubed it up. I pretty much followed his recipe but I have too many rubs laying around to go out and buy another just for a recipe, so I used one with a little spicy heat. I cooked it for about 3 hours before I added the glaze, which actually was made using his sweet sauce. I had to restoke my Kamado as the fire died down because I had the lump spread out too far (I noticed beforehand but didn't think it would affect the cook) so it probably cooked another hour total with the glaze on. By far, that was the best pork belly that I have ever attempted! I will definitely be doing a repeat. I had mac and cheese and corn casserole as my sides and I am feeling fat and happy right now.
