So every time I do an ambient temp read on my xl 1000 direct heat pellet smoker with ink bird ambient temp probe for verification it is always hotter. On top rack actual says 250 but rain bird external temp probe says 275. I mean heat rises right? Replaced temp probe and controller on pitboss same thing. My question is could I not take pit boss temp probe and move to the grate by the meat to get proper temps? Help me please this is driving me nuts

You can put the probe in boiling water to calibrate, or get a remote probe to put on the grate. It’s easy to get obsessed with temps and technology. Sometime it’s best to cook some food and figure out how the pit cooks-to gauge your cook times vs thermo temps.
