With my wife being gluten free by necessity, we are always looking for new ways to do things that don't involve gluten.

Lately I've been experimenting with Masa, which is a corn flour that is naturally gluten free and used widely throughout Latin countries.

Tonight it was Steak Huaraches.

Started by seasoning a flank steak with Naturiffic Peppery Lime Salt

Put some onions on the Blackstone

I also made some refried beans, by tossing pinto beans into some bacon fat that I had sautéed some garlic in.

Fired up the Weber Performer set up for direct grilling and put on the flank steak that had dry brined in the Peppery Lime Salt about 2 hours.

Then I shaped the Masa dough into a sandal (huarache) shape and put on the Blackstone. Once I flipped the huaraches I spread the refried beans on.

Steak went on top of the beans and then the onions. On top of that went a cabbage mix and some crumbled Queso Fresco cheese.

It was really good.

My wife doesn't like onions of any kind. Raw or cooked.
Unless I toss some on the Blackstone with some bacon fat or butter and grill them. Then she is all about some onions.
