It's been a couple of weeks and wanted to fire up my Safe. I thought it would be fun to make some pepper stout beef. Instead of a chuck roast I used a bottom blade from Costco. Also, instead of Guinness I used a Milk Stout from a local brewery.
For fun I put a drip pan underneath the roast. When the temp of the roast got to 165 I took the pan inside, skimmed the fat, then deglazed the pan on the stove with some of the stout. This added a lot of flavour to the jus.
It turned out really, really good. I made sandwiches with a fresh bun, bacon weave, crumbled Gorgonzola cheese, and some horseradish.
