Smoked a corn beef (brisket flat) on the Egg yesterday. Did a soak and changed water 3 times Sunday. Put on Thirdeye's rub Sunday night. Smoked at 145 until the meat hit 160. Placed in a pan opn foil balls and added a can of beer and covered with foil. Increase Egg Temp to 275 and did a steam finish. Sliced paper thin with my slicer this morning. Turned out great even though I made an error and sliced with the grain. Was good, moist, a little peppery, and pretty tender. Glad I sliced it thin
