Earlier this year we sold all our smokers in hopes of building a higher quality one that better fits our needs. After thinking it over quite a bit, we came up with a design that we are thrilled about. It will be similar to the Old Country Over & Under, but with a few key differences. First, it will be constructed entirely of ¼” steel. Also, the cooking chamber will be squared off at the top instead of an octagon shape. Last of all, the firebox will not run the full length of the cooking chamber, but rather will have a wider diameter.
Recently we cut out most of the pieces and made the bends. Here are some pictures of our progress:

If everything goes to plan, next week we will weld everything together and clean it up. The week after we will add finishing touches and then we should be smoking on it early September.
