Or, why you should always inspect and trim your meats. I found this nice little cyst in one of the butts I got for a church Q I did. Fortunately, the 7 other ones were still good and I had plenty left to serve, but I made sure to give each one a really good inspection and trim after this. I also pulled the meat from each butt individually in their own pans just to be safe in case something got by.


Anyone else ever come across something like this?

Is this the gland with the tube? Sometimes I find it, sometimes I don't or it's not there. I pull my cooked shoulder by hand so if it's there it's easy to spot and remove. If you were using a mechanical shredder someone may find a bite tasting and textured differently.

If I'm not talking of same gland, nevermind and carry on
