New (to me) Memphis Elite 300 - Questions

I was able to snag a used American made Memphis Elite 300 pellet smoker for $2k. Dude cooked a lot messier than I do but, she cleaned up real nice with some stainless steel cleaner. Anyway, questions - what do owners of this cooker use the side shelf hotel pan thing for? I've never really seen anything like it but, you can tell this cooker is a quality made item. I'm excited to cook on it this weekend. .

I'm not sure if you are asking about the external bin/shelf or a pan inside of the cook chamber.

If it's inside, I found this in the owners manual:

"Drip / Roast Pans
Used to prevent flare-ups, keep food from drying out, eliminate basting, and catch those flavorful juices that drip
from the meat. Various juices can also be added to the pan to impart a desired flavor, such as apple, lemon,
cranberry, pineapple, any cola, etc."

No - Thanks for the reply, that feature is pretty awesome though, very great cleanout system for ash and grease.

There's a little hotel pan type thing in the left shelf, I guess I'll just use it as probe storage. Love the cooker though - it's a Cadillac.

I didn't think to do a before/after but, I'll do a separate post on it - there's not a ton on info on these cookers as far as i can tell.
