My "Anything but charcoal" throwdown entry. Cause Moose said I had to.

When you say anything but charcoal it only means one thing to me. Since I have no gas or pellet cookers, it only leaves one choice...Live fire.

So I built a small fire with some kindling and cooked off some of my hot Italian sausage. I figured this would be a good time to break in the beefy SS grate I got from Big Poppa Smokers.


With the sausage done I added some more splits. And when they lit I added some more.


Then I laid out my bricks. (???)


Made some pizza crust from a package mix.

And built my pie with pepperoni, sausage, and fresh jalapenos.


The bricks provide a buffer from the raging heat below and gets the toppings up closer to the dome of the Weber. This way they get done around the same time.


Lookin like it's time to eat.


The crust is done just the way I like it.


And that's it.
Wood fired, brick oven (sorta) pizza in a pan.

I like it!! I was wondering how the jalapenos would be cooked without being crunchy, but you did that pizza perfectly. Well done! I'm glad you listened to Moose.
 
Great looking pizza, Craig! Haven't seen a pizza cooked in a kettle raised on bricks like this in a while, but I know it produces good results as it relates to balancing out the temp and getting more evenly cooked pies. Would love to see one using a regular pizza stone on the bricks using this method.

I like using the CI over a stone but I would like a bigger griddle version.

And there you go. Great minds and all that stuff.

I've tried it with just coals like that but have better luck with live fire which calls for more bricks.

Next time I'll try a smaller fire and cock the lid a bit and see how I like it.
 
Well you could have fooled me. I thought you came up with it too. Kinda like Led Zep and Spirit :laugh: Either way that looks awesome and on my list of things to try
